			<content:encoded><![CDATA[<p>Every year at my family&#8217;s Easter celebration gathering everyone brings a dish. Each dish is set out buffet style and given a number. After everyone eats they vote on their favorite dish. The dish with the most votes wins the Easter bunny potluck trophy. This Easter my favorite mashed potatoes took second place. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Here is the Recipe:</p>
<p>Ingredients:</p>
<p>8-10 medium sized russet potatoes<br />
1/2 c. bacon bits or pieces<br />
6 oz sour cream<br />
4 Tbs Butter<br />
4 Tbs french onion dip (prepared)<br />
salt (I like coarse sea salt) to taste<br />
pepper to taste<br />
onion powder to taste<br />
garlic powder to taste<br />
1 c jalepeno jack cheese or habenero cheddar cheese grated<br />
1/2 c. regular grated cheese (whichever shredded cheese you like)<br />
1/4 c. chives</p>
<p>1. Cut potatoes into 1/4&#8243; pieces ( I prefer to leave the skin on)<br />
2. Boil potatoes until soft enough to mash up<br />
3. Remove from heat and drain water off<br />
3. Add all ingredients except the chives and regular cheese<br />
4. Mix well with food processor or potato masher<br />
5. Place in casserole dish and cover with the regular cheese and sprinkle with chives<br />
6. Place casserole dish under the broiler until cheese is bubbly.<br />
7. Enjoy <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> )</p>
<p>The jalepeno cheeses add a nice little kick that most don&#8217;t expect in a mashed potato dish and the sour cream contributes to a nice creamy texture.</p>
