Every year at my family’s Easter celebration gathering everyone brings a dish. Each dish is set out buffet style and given a number. After everyone eats they vote on their favorite dish. The dish with the most votes wins the Easter bunny potluck trophy. This Easter my favorite mashed potatoes took second place.
Here is the Recipe:
Ingredients:
8-10 medium sized russet potatoes
1/2 c. bacon bits or pieces
6 oz sour cream
4 Tbs Butter
4 Tbs french onion dip (prepared)
salt (I like coarse sea salt) to taste
pepper to taste
onion powder to taste
garlic powder to taste
1 c jalepeno jack cheese or habenero cheddar cheese grated
1/2 c. regular grated cheese (whichever shredded cheese you like)
1/4 c. chives
1. Cut potatoes into 1/4″ pieces ( I prefer to leave the skin on)
2. Boil potatoes until soft enough to mash up
3. Remove from heat and drain water off
3. Add all ingredients except the chives and regular cheese
4. Mix well with food processor or potato masher
5. Place in casserole dish and cover with the regular cheese and sprinkle with chives
6. Place casserole dish under the broiler until cheese is bubbly.

The jalepeno cheeses add a nice little kick that most don’t expect in a mashed potato dish and the sour cream contributes to a nice creamy texture.
